Also known as: Dam stored sake
Dam wine is an alcoholic beverage that is aged in a dam auditorium, rim tunnel, or reservoir. The temperature in the auditorium and rim tunnels is always maintained at a constant level, whether in summer or winter, making them suitable for aging.
In addition, since the temperature is always maintained at a constant level without the use of air conditioning, it is a storage method that has been gaining attention in recent years because it does not impose an energy burden.
Because of the small quantities, they are not often sold online, and in many cases are only available locally.

Miyagase Dam
Koganei Shuzo : Miyagase Dam stored sake Seimasu
This stored sake was created as part of a project to revitalize the Miyagase Dam area and was matured in the dam auditorium 80 meters underground. Miyamanishiki rice is used as the raw material. Two types of sake are available: special junmai and ginjo dry.
Nanakura Dam
Usui Shoten: Hakubanishiki Junmai Ginjo Hiyoroshi, Alps Lake Cave Storage
It has been stored in the rim tunnel of Nanakura Dam since 2004, and is said to have "a smooth, sweet, crisp, and gentle taste that does not get old even at room temperature" (quoted from the manufacturer's website).

Minamisaki Dam
Furuya Sake Brewery : Fukayazakura Junmai Dam-aged Minamisaki Dam
It is aged in the audit corridor of the Minamisaki Dam. It is said to have "a gentle and fascinating flavor that differs from both refrigerated and room-temperature aging" (quoted from the manufacturer's website).

Sake aged for 4 months by the Saku SAKE Aging Study Group, a volunteer group of sake brewers in the Saku area of Nagano Prefecture, using the audit corridor of the room dam. A portion of the proceeds is donated to Nagano Prefecture for flood control.
Chikumanishiki Shuzo:Dam aged dry special pure rice Chikumanishiki
It is said to be "mellow, dry and full of flavor," and unusually for sake, it is aged in a wine bottle with a cork stopper.
Furuya Sake Brewery : Fukayazakura Junmai Dam-aged Yochi Dam
Another dam sake by the Furuya Sake Brewery, which also stores at the Minamisaki Dam.
Takeju Honke Shuzo: Misonotake Nama-age Nama Hashiroshi Junmai (pure rice)
Sake brewed slowly over time using traditional methods. After pressing, the sake is left to mature slowly without heat treatment.
Kurosawa Shuzo: Izutsunaga Tokubetsu Junmai Sake Hiyahi Oroshi, dam ripe
It is said to have a "pleasantly soft mouthfeel and a mellow taste that has gained depth over the summer with a bright, gorgeous ginkoku aroma" (quoted from the manufacturer's website).
Saku-no-hana Shuzo: Saku-no-hana Junmai Daiginjo Kinmon-nishiki Dam Aged
It has a moderate ginjo aroma and the flavor of the rice has matured to the point where it is ready to drink" (quoted by the distributor).
Furuya Dam
As in the case of the Yonago Dam, it is stored by the "Saku SAKE Aging Study Group".

Unazuki Dam
This is one of the projects of "Toyama Dam Aged Sake" in which 15 member companies of the Toyama Sake Brewers Association mature sake in five dams in Toyama Prefecture. This is the first time in Japan that sake is aged in a dam all together in the prefecture.

Arimine Dam
In commemoration of the 60th anniversary of the completion of the Arimine Dam, it has been stored and aged in the left bank audit corridor since 2019. It is also one of the "Toyama Dam Aged Sake.
Masuda Shuzo: Junmai Daiginjo "Arimine", Junmai Harazake "Arimine
Part of the brewing water is said to come from the upper reaches of the stream that flows into the reservoir. It is sold at the Masuda Sake Brewery's "Saseki" store.

Sanbo Dam
Sake aged in the audit corridor is sold in cooperation with three local sake breweries that use water from the same system as the Sanpo Dam.
Yamana Brewery:Hyogo Sake 85 Calvados barrel-aged, Port wine barrel-aged, Cognac barrel-aged
Hyogo Sake 85" is a variety of sake rice produced in Hyogo Prefecture that is resistant to disease and high temperatures, and is said to be "aromatic, clean, and smooth.
Nishiyama Shuzojo : Junmai Daiginjyo Kochumugen
This is also a Junmai Daiginjo-shu made with "Hyogo Sake 85".
Kamosho Shuzo: Hanatori Suehiro Junmai-shu
Junmai-shu made with 100% Koshihikari rice produced in Kamosho, Tanba.
Takihata Dam
The product has been commercialized after a demonstration experiment since fiscal year 2008. It has become a return gift for Kawachinagano City hometown tax payment.
Amano-shu, monk sake, limited storage at Takibata Dam, 1000 days aged matured sake

Yahagi Dam
As part of the Yahagi Suigen Forestland Council's efforts to revitalize the local community using the dam, the company began storing sake inside the dike in collaboration with four manufacturers in Toyota City. The sake was sold out in just two hours in 2020, and sold out immediately in 2021.

Yamba Dam

Misogawa Dam
Storage in underground tunnels began in 2017 as part of the Water Source Area Vision Project in collaboration with Kiso Village, sake breweries, and the Misogawa Dam. It appears to be sold year-round.
Yukawa Shuzoten: Kisoji Junmai Ginjo Kisogawa Genryu Dam Storage Sake
Maruyama Dam
Two local sake breweries in the town of Yaotsu, the town of Yaotsu, the Yaotsu Chamber of Commerce and Industry, and the Ministry of Land, Infrastructure, Transport and Tourism have developed a new local specialty: sake stored at Maruyama Dam. The label, designed by a student at Nagoya Zokei University, features the gate pier of the Maruyama Dam. The sake is stored in the audit corridor.

Hayamoura Dam
At the suggestion of Tosa Mayor Moriya Wada, Tosa Sake Brewery and the Japan Water Agency agreed to store the sake in the auditorium.
Tosa Sake Brewery
It is stored as "Aikawa Homare Yamahai Junmai Sake 58" but was sold at the roadside station "Tosa Sameura" under the name "Sameura Cave" but it seems to have sold out.
Yokogawa Dam
As part of the Yokogawa Dam water source area vision, Oguni Town is taking the initiative in creating a specialty product. Aged in the audit corridor.
Sakuragawa Sake Brewery
In 2021, a total of 327 bottles will be stored, 255 720ml bottles and 72 1.8L bottles, including Junmai Daiginjyo sake.
Mikuni River Dam
The Mikuni River Dam Storage Sake Project has been in operation since 2006, and the Mikuni River Dam is probably the first dam sake project in Japan. Stored in the audit corridor; as of 2021, there is no information available, so it is unknown if it is stored or not.
Rumoi Dam
Kunimei Shuzo: Junmai Rumoi Dam stored sake
Stored at the site of the temporary drainage channel of the Rumoi Dam. Developed by the Rumoi Development and Construction Department of the Hokkaido Development Bureau, Hokkaido Rumoi Construction Management Department, and Kunimei Sake Brewery.
Toyohirakyo Dam
Organized by the Hokkaido Development Bureau of the Ministry of Land, Infrastructure, Transport and Tourism and a local winery, the wine has been aging in the Rim Tunnel since 2015.

Jozankei Dam

Shichigajuku Dam
The event was planned by the town of Shichigajuku and others to commemorate the 30th anniversary of the completion of the Shichigajuku Dam.
Eiheiji Dam
The project is a joint effort by Fukui Prefecture and local sake brewer Kuroryu Sake Brewery to utilize the Eiheiji Dam as a local revitalization and tourism resource.
Naruko Dam
As part of regional revitalization efforts, a memorandum of understanding was signed to experiment with long-term aging and storage of sake brewed in Osaki City. 4-year long-term aging will begin in 2020, with tastings to be conducted every 3 months or 6 months to confirm the degree of aging. The storage location is in the old road drainage tunnel, upper level.corridor connecting an annex to a pond-side building (in traditional palatial-style architecture)Three locations in the lower appraisal corridor.

Miura Dam
Sake from the Nakazen Brewery has been stored in the auditorium since 2019 with the cooperation of Kansai Electric Power Co. It is also a return gift for Furusato taxpayers.
Shizumi Dam
Iinan Town, the Chugoku Regional Development Bureau of the Ministry of Land, Infrastructure, Transport and Tourism, and Akana Sake Brewery worked together to revitalize the area surrounding the dam. The name of the sake is "jiiru" (meaning "cure" in Japanese), which is also a play on the word "jisui" (meaning "flood control").
