Miyagase Dam

Koganei Shuzo : Miyagase Dam stored sake Seimasu

This stored sake was created as part of a project to revitalize the Miyagase Dam area and was matured in the dam auditorium 80 meters underground. Miyamanishiki rice is used as the raw material. Two types of sake are available: special junmai and ginjo dry.

Nanakura Dam

Usui Shoten: Hakubanishiki Junmai Ginjo Hiyoroshi, Alps Lake Cave Storage

It has been stored in the rim tunnel of Nanakura Dam since 2004, and is said to have "a smooth, sweet, crisp, and gentle taste that does not get old even at room temperature" (quoted from the manufacturer's website).

Furuya Sake Brewery : Fukayazakura Junmai Dam-aged Minamisaki Dam

It is aged in the audit corridor of the Minamisaki Dam. It is said to have "a gentle and fascinating flavor that differs from both refrigerated and room-temperature aging" (quoted from the manufacturer's website).

It is said to be "mellow, dry and full of flavor," and unusually for sake, it is aged in a wine bottle with a cork stopper.

Unazuki Dam

This is one of the projects of "Toyama Dam Aged Sake" in which 15 member companies of the Toyama Sake Brewers Association mature sake in five dams in Toyama Prefecture. This is the first time in Japan that sake is aged in a dam all together in the prefecture.

Arimine Dam

Yamana Brewery:Hyogo Sake 85 Calvados barrel-aged, Port wine barrel-aged, Cognac barrel-aged

Hyogo Sake 85" is a variety of sake rice produced in Hyogo Prefecture that is resistant to disease and high temperatures, and is said to be "aromatic, clean, and smooth.

Nishiyama Shuzojo : Junmai Daiginjyo Kochumugen

This is also a Junmai Daiginjo-shu made with "Hyogo Sake 85".

Maruyama Dam

Two local sake breweries in the town of Yaotsu, the town of Yaotsu, the Yaotsu Chamber of Commerce and Industry, and the Ministry of Land, Infrastructure, Transport and Tourism have developed a new local specialty: sake stored at Maruyama Dam. The label, designed by a student at Nagoya Zokei University, features the gate pier of the Maruyama Dam. The sake is stored in the audit corridor.

Hayamoura Dam

At the suggestion of Tosa Mayor Moriya Wada, Tosa Sake Brewery and the Japan Water Agency agreed to store the sake in the auditorium.

Tosa Sake Brewery

It is stored as "Aikawa Homare Yamahai Junmai Sake 58" but was sold at the roadside station "Tosa Sameura" under the name "Sameura Cave" but it seems to have sold out.

Yokogawa Dam

Sakuragawa Sake Brewery

Mikuni River Dam

Stored at the site of the temporary drainage channel of the Rumoi Dam. Developed by the Rumoi Development and Construction Department of the Hokkaido Development Bureau, Hokkaido Rumoi Construction Management Department, and Kunimei Sake Brewery.

Toyohirakyo Dam

Organized by the Hokkaido Development Bureau of the Ministry of Land, Infrastructure, Transport and Tourism and a local winery, the wine has been aging in the Rim Tunnel since 2015.
